I have a huge number of mods, but I'll try to list the ones I couldn't live without. I'll probably forget a few. Here's the Nexus link for Stardew mods: https://www.nexusmods.com/stardewvalley/mods/categories/. You'll need SMAPI and Content Patcher for mods to run. Otherwise, I recommend:
1) An aesthetic mod. This is a personal choice, and if your girlfriend likes how the default game looks, great! I use Starblue Valley. I think the most popular one is Eemie's Just Another Map Recolor. A nice newer one made by someone who's still very active in modding is A Wittily Named Recolor by Ace.
2) Automate. This lets you basically build factories. Without it, making lots of jelly/wine/etc. is a pain.
3) Chests Anywhere. Lets you label and sort your chests, and access them anywhere
4) CJB Cheats menu. It has lots of useful stuff in it. I use the insta-catch fish cheat most, because I can't play the fishing game.
5) Fast Animations. Sitting around waiting for Cliff to break geodes is boring without this.
6) A building mod. Another aesthetic choice. I use Hudson Valley Buildings, but others include Flower Valley, medieval modern buildings, and a whole lot more. Make sure to get a seasonal version of whatever you choose.
7) Remote fridge storage. Lets you put crops in chests and designate those chests as refrigerators so you can cook from them directly.
8) Rented tools. Rent a low-level tool from Cliff whenever you upgrade a tool of that type, so you don't run around lacking an ax or whatever for two days at a time.
9) Skull Cavern Elevator. Puts an elevator in the skull cavern like in the main mine.
10) To Do Mod. Lets you write in-game notes to yourself, like how many seeds you need to buy.
11) UI info suite. Gives you all sorts of information about stuff in the game.
12) Stardew Valley Dialogue Expansion. Gives characters a lot more canon-friendly dialog, especially as in-game years pass.
